Tasty Tuesdays!

Welcome back to Tasty Tuesdays. Today will be a favorite salad of mine. Summer is always a time to have a few salad recipes in your back pocket, because it seems like you always need to take one with you to a BBQ. This one can be made ahead, and assembled (add lettuce and croutons) when you get there.

Chicken Caesar Pasta Salad

1 pound penne pasta, cooked and drained
1 1/2 pounds boneless skinless chicken breast, cooked and cubed
1 bottle Caesar dressing
1/4 cup lemon juice
1/4 cup shredded Parmesan cheese
1 tsp pepper
1 head romaine lettuce, cut into strips

Mix dressing, lemon juice, Parmesan and pepper. Mix well, combine in a large bowl with pasta and chicken. Mix in lettuce and top with croutons.
